Nothing is going to happen to you if you ejaculate every day. I really don’t see why should you do something, why should you stop sperm release.
There is nothing wrong with it and you can do that several times per week. Once a day is totally enough. That doesn’t necessary have to mean that you are addicted to masturbation.
I also do believe that removing sperm is healthy and that this is going to help you produce even more sperm.
So, don’t be scared. Enjoy but be careful. This should not become your obsession.
