mexican garden scramble

4 large eggs
1/2 fresh jalapeno finely chopped
1/4 cup chopped onion
2 tortillas - cut into small pieces
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Cheddar cheese
3 or 4 Tablespoons re-fried beans - optional
lettuce - as desired
salsa - to taste

In a large bowl, beat the 3 eggs. Add the onions, 1/2 of the jalapeno and the beans (if using).

In a lightly greased frying pan over medium heat, warm the tortilla pieces for about 2 minutes - stirring often. Add the egg mixture. Cover with 1/2 of the cheese and begin scrambling. Keep scrambling until the eggs are completely set.

Top each serving with the remaining cheese, a bit of shredded lettuce, the remaining chopped jalapeno and salsa to taste.
